What is Seolleongtang? (se-olleong-tang)

Seolleongtang is a traditional Korean soup made with ox or beef bone broth.  In making a Western-style beef broth the aim is a clear, brown broth by simmering beef bones for many hours. In contrast, the goal of making Korean Seolleongtang is to achieve a milky white broth.  It’s unique milky white colour results from the broth being boiled at a high rate so the fat emulsifies.  Initially the dish was a local delicacy of Seoul, but is now commonly consumed across Korea.  Much more than just a meal, Seolleongtang is a dish deeply rooted in Korean tradition:
